Classic Medovik cake with Greek yogurt cream

This version uses 10% fat Greek yogurt (instead of sour cream and whipped cream). The cream comes out light, with a mild tang that balances the honey layers. About 20–22 cm in diameter, about 10 cm tall, for 10–12 servings.

Fresh Pantry Ingredients

Simple Preparation Steps

Ingredients for the layers:

  • Honey — 100 g (liquid; if crystallized, melt it)

  • Butter — 100 g (unsalted, if salted- don't add additional salt)

  • Sugar — 150–200 g (to taste)

  • Eggs — 3

  • Baking soda — 1 teaspoon (do not mix it with vinegar)

  • Flour — 400–450 g (as much as the dough will take)

  • Salt — 3-4 g

Ingredients for the cream:

  • Greek yogurt, 10% fat — 800 g (cold, plain, no additives)

  • Powdered sugar — 150–200 g (to taste; use powdered sugar so the cream does not thin out)

  • Vanilla extract or vanilla sugar — optional

  • Whipped cream / sour cream stabilizer — 1–2 packets (follow the packet instructions if the yogurt seems too soft; optional, but recommended for stability)

  • cherries/ sour cherries - optional

Ingredients for decoration:

  • Layer scraps (ground into crumbs)

  • Nuts (walnuts, almonds) — optional, ground

  1. Make the dough for the layers (cooked dough):

  • In a bowl over a steam bath (or in a thick-bottomed pot over low heat), melt the honey, butter, and sugar. Stir until smooth (do not boil).

  • Take it off the heat and let it cool slightly (to about 60°C / 140°F).

  • Add the eggs one at a time, beating quickly with a whisk so they do not scramble.

  • Add the baking soda and salt — the mixture will foam and increase in volume.

  • Gradually add the sifted flour and knead the dough. It should be soft, elastic, and slightly sticky (not stiff).

  • Wrap the dough in plastic wrap and refrigerate for 1–2 hours (or overnight — it will roll out more easily).

  1. Bake the layers:

  • Preheat the oven to 180–200°C (350–400°F).

  • Divide the dough into 8–10 equal pieces (about 100–120 g each).

  • On parchment paper (or a silicone mat), roll each piece into a thin circle about 20–22 cm across (dust with flour so it does not stick).

  • Prick with a fork and bake for 3–5 minutes until golden (they bake quickly).

  • While the layers are still hot, trim them with a template (a 20 cm plate) — save the scraps for crumbs.

  • Cool the layers on a wire rack.

  1. Soak and finish:

  • Refrigerate the cake for at least 8–12 hours (better overnight or a full day) — the layers will soften and absorb the cream.

  • Before serving, leave it at room temperature for 20–30 minutes.

Total Cook Time

About 10–12 hours from start to serving if you chill the dough for 1–2 hours, or overnight if you rest the dough longer. Most of that is waiting, not hands-on work.

Active time: about 1½–2 hours

  • Cook and mix the dough: 20–30 minutes

  • Roll and bake 8–10 layers: 45–60 minutes (each layer bakes only 3–5 minutes, but rolling and trimming add time)

  • Make the cream and assemble: 20–30 minutes

Waiting time

  • Dough in the fridge: 1–2 hours (or overnight)

  • Cake in the fridge so the layers soften: at least 8–12 hours, better overnight

Practical schedule

  • Same day: make the dough in the morning, bake and assemble in the afternoon, serve the next day.

  • Two days: make the dough the evening before, bake and assemble the next day, serve the day after that.

Servings — 8–10 pieces

Recipe Yield

  1. Make the cream:

  • Beat the cold Greek yogurt with a mixer on medium speed for 2–3 minutes.

  • Gradually add the powdered sugar, continuing to beat until fluffy and smooth (5–7 minutes).

  • If the cream is too soft, add the stabilizer according to the instructions and beat again.

  • The cream should be thick, like full-fat sour cream, but delicate.

  1. Assemble the cake:

  • Place the first layer on a plate.

  • Spread about 4–5 tablespoons of cream evenly (divide the cream roughly equally among all the layers) and optionally - add some cherries in the cream.

  • Repeat with all the layers (leave the top layer without cream, or with only a thin layer).

  • Cover the sides and the top with the remaining cream.

  • Grind the layer scraps in a blender into crumbs and sprinkle them over the whole cake.

  • Optionally, add nuts between the layers or on top.

The cake will be fragrant, delicate, and not too heavy thanks to the yogurt. If the cream is a little tangy, that is a good thing — it brings out the honey. Enjoy!

Homemade pasta
in tomato sauce

Homemade pasta in tomato sauce, with Parmesan and fresh basil. The order is the same: onion first, then garlic, then the sauce, and the pasta goes straight from the water into the pan.

— What You Need

Method

Fresh Pantry Ingredients

Simple Preparation Steps

Pasta

  • 200 g flour (00 or all-purpose)

  • 2 eggs

  • a pinch of salt

Sauce

  • 2–3 tablespoons sunflower oil or olive oil

  • 1 medium onion, finely chopped

  • 2 garlic cloves, chopped

  • 400–500 g tomato sauce (passata or canned crushed tomatoes)

  • salt

  • ½ teaspoon sugar (cuts the acidity)

  • ground black pepper

  • dried herbs: dried onion and dried parsley, a pinch of each

  • grated Parmesan, for serving

  • fresh basil leaves

Dough:

  1. Sift the flour onto the counter, make a well in the center, and crack in the eggs. Add the salt.

  2. Mix with a fork, then knead by hand for 8–10 minutes until the dough is smooth and elastic. If it is too dry, wet your hands; if it is sticky, dust with a little more flour.

  3. Wrap in plastic and rest for 30 minutes at room temperature.

  4. Roll it out thin (with a rolling pin, on a floured surface) and cut into tagliatelle, fettuccine strips or any other shape you want about 6–8 mm wide. Separate them so they do not stick.

  5. Transfer the pasta into an empty bowl or tray and sprinkle a little bit of flour on top and let it rest until you prepare the sauce in the pan.

Total Cook Time

About 1 hour to 1 hour 15 minutes from start to plate. Most of that is hands-on; the only real wait is the dough rest.

Active time: about 45–55 minutes

  • Mix and knead the dough: 10–15 minutes

  • Roll and cut the pasta: 15–20 minutes

  • Make the sauce: about 20 minutes (onion 4–5 minutes, then simmer 10–12)

  • Boil the pasta and toss it in the sauce: 5–8 minutes

Waiting

  • Dough rest: 30 minutes

The sauce can be made while the dough rests or while you roll it, so the clock does not simply add every step. If you start the sauce during the rest, you are eating in about an hour.

Servings: 2 portions

Recipe Yield

Serve right away, with a little more Parmesan at the table.

Together:

  1. Bring a pot of salted water to a boil. Cook the fresh pasta for 2–3 minutes, until it floats and is al dente.

  2. Lift it out with a slotted spoon (or drain it, keeping a little of the cooking water) and put it straight into the pan with the sauce.

  3. Toss for 1 minute on low heat so it takes up the sauce. If it is too thick, add 2–3 tablespoons of the pasta water.

  4. Turn off the heat, sprinkle with Parmesan, and top with basil leaves torn by hand.

Sauce:

  1. Heat the oil in a wide pan over medium heat. Add the onion and cook for 4–5 minutes until soft and lightly golden.

  2. Add the garlic and stir for 30–40 seconds, without letting it burn.

  3. Pour in the tomato sauce. Season with salt, sugar, pepper, dried onion, and dried parsley.

  4. Simmer on low for 10–12 minutes until it thickens slightly. Taste and adjust.
